Plant Eating Foodie~ noun

Easy Veggie Nachos 

Ingredients

Nacho chips

1 can of black beans

1 bag of diary free cheese shards

onion

red pepper

fresh spinach 

mushrooms

minced garlic

taco seasoning

corn

1 jar of your favorite salsa

Optional items:

Avocado

jalapeno peppers

veggie retried beans 

 

Prep baking pan by adding a tinch of olive oil to the pan. Spread your favorite nachos chips across the pan and set it aside. Go ahead and preheat the oven to 350.

Grab your favorite nonstick pan and lets get to sautéing!

Combine all additional ingredients ( with the exception of the nondairy cheese shards) in pan. Add your favorite seasonings, I like to add garlic powder, pink Himalayan salt,  and pepper.

Allow veggies to cook for 10 mins while stirring often. 

Melt the cheese shards by adding coconut milk and cheese shards to a small pot. Stir until cheese is melted.

Its time to add you veggie mixture to your chips, layer as you choose then top it off with your melted cheese. 

Place the nachos in the oven for 10 mins then enjoy!

Spicy Veggie Stir-Fry 

Ingredients 

Chopped zucchini, broccoli, carrots, onion, red and green bell peppers, and mushrooms

minced garlic

ginger

1 box of veggie spaghetti noodles

1 cup of soy sauce

1/3 cup of brown sugar

Red pepper flakes

chopped ginger

 Olive oil or coconut oil 

Prepare spaghetti according to the box or however you choose to prepare your noodles. Once they are done, drain and coat with a dash of olive oil and season with pepper.

In a separate pan combine olive oil and minced garlic over medium heat. 

Next toss in veggies and season to your taste. Allow the veggies to simmer for 10 minutes covered. 

Now, lets get your wok and get it warmed up over medium to low heat. Add soy sauce, brown sugar, red pepper flakes, garlic powder and ginger.

Stir for 5-7 minutes then add veggies. 

Coat veggies with sauce then and noodles. Stir then allow stir-fry to come together for 10 minutes over medium heat.
